Consider an Aloha Formal at Seattle’s Most Awarded Fine Dining Restaurant
This year, Canlis will be hosting Seattle’s most exclusive scene of a truly one-of-a-kind New Year’s Eve party. And it’s not what you think! What used to be its biggest moneymaking night of the year has shifted into what is now considered the most exclusive NYE party in Seattle. Since opening its doors in 1950, Canlis has been known for crafting memorable experiences among Seattleites and fancy restaurant-goers. But it is only in the last few years that brothers Mark and Brian Canlis have made a bold change to their NYE bash.
“The point of fine dining is that you have thought of everything. And if a fine dining restaurant is going to throw a party, it has to be the most considered party you have ever been to,” Mark says.
From day one, each party has been about bringing people together to build a better tomorrow. Over the years, they have donated to more than 600 charities. All proceeds from this year’s event will go to the local charity MUST, a mentoring program for at-risk youth in the inner city.

The party is formulated over late-night staff meetings in the “tiki lounge” (what we would know as the restaurant bar).
“As long as it doesn’t hurt the restaurant, I think it’s very on-brand,” Mark says.
Some ideas floating around go back to their Hawaiian roots where their first restaurant, Canlis Charcoal Broiler, opened in 1946 in Honolulu.
“The Hawaiian legacy has always been a part of our brand,” Mark says.
Will there be sand castles?
He chuckles as he explains how “sand has different qualities, different grains” and so much of the party is about discovery. Everything is considered, from the shape of the ice cube and what’s sitting on top of it, to the glass it sits in.
“I probably drank out of 30 different glasses to find this shape.”
The restaurant shuts down for a full 24 hours prior to the event in order to prepare for a night of discovery.
“We have the best service team in the country. If we can’t do it right with our own staff, we bring in actors to help create the vibe,” Mark says.
